Cauliflower Sushi Rolls - Low Carb

Makes two rolls.


  • 2 organic sushi nori sheets

  • 1/2 avocado

  • 1/2 cucumber

  • ½ lb piece of wild Alaskan salmon



  • Chop cauliflower by hand or blend in a food processor until it is chopped into small rice-like pieces. Add the rice vinegar, soy sauce, and erythritol. Cook on stove stop around 10 minutes, cauliflower should release moisture and soften. Add sesame seeds and let cauliflower cool in the fridge while prepping remaining ingredients.

  • Cut cucumber, avocado, and salmon into strips

  • Lay out nori on non stick silicone mats or parchment with bamboo

  • Lay cauliflower mixture on top or nori

  • Place ingredients on one end

  • Roll sushi and slice roll. Serve up with some wasabi and gluten free soy sauce!

Tip: To make it spicy mix with mayonnaise, sriracha, and salt, to taste.
